Ghee is butter that has been slowly clarified so its water cooks away and the milk solids separate, leaving golden cooking fat with a concentrated buttery flavor.
Spoon it into a skillet, roast vegetables with it, fold it into rice, or add a little at the table. It works in both everyday meals and special-occasion cooking.
Clarifying removes the milk solids that can brown quickly, making ghee well suited to searing, sautéing, and roasting.
